The Malay bariani is a modified recipe from the middle east, introduced by the middle east traders at the Singapura trading port. The local adapted the biryani using available spices & herbs. The Bariani Gam is perhaps closest to the original recipe where the meat get cooked inside the pot with the rice, meat juices mingle and gives meaty smooth tastes to the rice. Bariani was said originated from Persia, called 'Baria', meaning cooking rice and meat together in the same pot. ‘Baria’ and later was intoduced to and adapted by the Middle east countries and by the Indian sub continents by the Moguls.
